Mindy Jaffe is the co-founder and coordinator of the Windward Zero Waste School Hui.

"We divert organics from the waste stream and practice hot composting and vermicomposting – simple, natural, inexpensive technologies that are conducted on site. Any schoolyard in Hawaii’s tropical climate can easily absorb the daily organic waste generated and benefit from its transformation to nutrient-rich soil and fertilizer. Organic material added to gardens, landscaping and lawns promotes plant growth, increases moisture retention, mitigates erosion, promotes biodiversity and restores depleted, barren schoolyards to vigorous health. All surplus compost and vermicompost is sold to the public, raising revenue to support each school’s Garden Fund."
